A century later, the same foods are sold as something special. Which raises a quiet question: what exactly happened in between?
What Are Fermented Foods?
Fermented foods are foods transformed by microorganisms such as bacteria, yeasts, or fungi. During fermentation, these microorganisms change the food's sugars and other components, producing compounds that affect flavour, texture, acidity, aroma, and preservation.
Traditional fermented foods include sauerkraut, kimchi, naturally fermented pickles, kefir, kombucha, sourdough, miso, and other foods made using microbial cultures or naturally occurring microorganisms. Fermentation can be spontaneous or controlled through the addition of a starter culture.
Not every food described as "pickled" or "cultured" is fermented, however. Some foods are preserved with vinegar or other processing methods without undergoing the same microbial fermentation process. That distinction becomes important when looking at how industrial food production changed traditional fermentation.
Why Did Fermented Foods Decline in Western Diets?
The 20th century didn't slowly phase out fermentation. It replaced the conditions that made fermentation necessary.
Refrigeration arrived in homes from the 1920s onward. Pasteurisation became standard across dairy and many packaged goods. Industrial canning scaled up. Vinegar replaced brine. Preservatives replaced time. Each of these developments solved a real problem - spoilage, safety, consistency - but they also removed the need for fermentation from everyday food production.
What followed was a steady erasure. Not of the foods themselves, but of the living process behind them. Pickles remained on shelves, but they were pickled in vinegar, not fermented in salt. Sauerkraut stayed available, but pasteurised and shelf-stable. The product looked the same. The biology was completely different.
A study published in Nutrients (2019) highlighted that the shift toward ultra-processed food patterns across Western populations coincided with measurable reductions in dietary microbial diversity. The researchers noted that traditional fermented foods had historically served as a consistent source of live microorganisms - something largely absent from the modern Western diet.

Fermented vs. Pickled Foods: What's the Difference?
Fermented and pickled foods can look similar, but the preservation process is different.
Fermented foods are produced through the activity of microorganisms. In vegetable fermentation, for example, bacteria can convert available sugars into acids, gradually changing the food's flavour, texture, and acidity.
Pickling can also involve fermentation, but many modern pickled foods are preserved directly with vinegar rather than through microbial fermentation. In that case, the acidity comes primarily from the added vinegar rather than from microorganisms producing acids during fermentation.
This distinction explains why two jars of pickles can look almost identical while being made through completely different processes.
What was actually lost
Fermented foods made through traditional methods are living. The microbes in naturally fermented sauerkraut, unpasteurised pickles, or raw kombucha are active - metabolising, producing acids, shaping flavour, and interacting with whatever environment they enter.
Pasteurisation ends that. It extends shelf life, standardises taste, and removes any unpredictability. It also removes the living component entirely.
What's often overlooked is that this wasn't a failure of industrial food science. It was a trade-off. Safety and scale came at a cost that wasn't fully understood at the time - and wasn't considered especially important. Gut health wasn't a priority in 1950s food policy. Shelf stability was.

The marketing layer that came later

By the late 20th century, fermented foods had largely left home kitchens. And when they returned, they often returned through a different door: wellness marketing.
Kombucha, kimchi, and kefir re-entered mainstream consciousness packaged as "functional foods" with health claims attached. Some of those claims were grounded. Many were stretched well beyond what the evidence supported.
This is where things get slightly complicated. The renewed interest in fermented foods is genuinely warranted - research into the gut microbiome has expanded significantly since the early 2010s, and scientists have become more specific about how dietary patterns affect gut composition. A landmark study published in Cell (2021) by Wastyk et al. found that a diet high in fermented foods increased microbiome diversity and reduced markers of immune activation over a ten-week period.
But the wellness industry picked up that research and ran with it far beyond what it actually said. The result: a lot of noise around fermented foods that made the topic feel like a trend rather than something with real, quiet depth.

Neither approach is inherently better in every respect. Commercial production offers consistency and scalability, while traditional fermentation preserves a process in which microbial activity remains central to how the food develops its character.
Why Is Fermentation Becoming Popular Again?
The earlier wave of fermentation interest in the 2010s was largely trend-driven. This one feels quieter and more considered.
People are approaching it with more specific questions: what makes something genuinely fermented versus vinegar-preserved? Does pasteurisation change what a product does? How long should something ferment to develop the right profile?
Those are the questions of someone who wants to understand the process, not just buy the product.
What the 20th century removed wasn't just fermented foods from the kitchen. It removed familiarity with fermentation as a process - the intuition about timing, smell, texture, and change that used to be passed down practically.
