How Commercial Kombucha Production Can Change the Fermentation
Scaling fermentation for retail creates real challenges. A living product with active cultures changes over time. It continues fermenting. Carbonation builds. Flavour shifts. These are all signs of a healthy, living product, and they are also problems for standardised retail.
To manage this, many commercial producers use one or more of the following:
Pasteurisation.
Heat is applied after fermentation to stop microbial activity. This extends shelf life and stabilises flavour, but it kills the live cultures that were present during fermentation. A pasteurised kombucha is, microbiologically speaking, no longer a living product.
Filtration.
Some producers filter out yeast and bacteria rather than using heat. The result is a cleaner-looking, more consistent liquid, but again, most of the microbial content is removed in the process.
Flavour and carbonation added post-fermentation.
The tart, fizzy character of kombucha can be replicated using acids, juices, and forced carbonation. The finished drink may taste similar to fermented kombucha without having gone through a full, active fermentation with a live SCOBY.
Added cultures as a marketing claim.
Some products add probiotic cultures back after processing. This is different from cultures that developed naturally during fermentation and lived within the food matrix throughout.

What a live SCOBY looks like in practice

For anyone who has only encountered kombucha as a packaged product, a SCOBY can look surprising. It is thick, slightly translucent, and rubbery. It sits at the top of the liquid, sometimes sinking partway through a brew. It grows with each fermentation cycle, forming new layers.
